Kása Palma

Chef Aaron Isip is a Manila-born, Paris-trained chef and saucier, currently chef-owner of Kása Palma and creator of the private-dining concept Balai Palma in Poblacion, Makati. He is known for his "island-in-the-city" tasting menus that fuse French technique with Filipino, Latin, and Southeast Asian flavors. After more than a decade in top Paris kitchens, including Apicius and his own restaurant Dix-Huit—where he earned Chef Espoir 2015 for Île-de-France from Gault & Millau—he returned to Manila to cook what he calls cuisine d'auteur: personal, seasonal, smoke-kissed plates such as Foiesilog and ube-driven courses that have made Kása Palma a reference point for modern Filipino dining.

I love the overall vibe of The Spirits Library in Poblacion. Their original and classic cocktails are always well-balanced and delicious
