Chef Luis "Lulu" Locsin is a Manila-based kusinero who trained at the Culinary Institute of America and went on to cook at the Jean Georges restaurant group in New York, Metiz in Manila, and Locavore in Bali before returning home to cook on his own terms. His cooking is deeply local, built around a freely Filipino pantry, homemade vinegars, and ingredients most chefs overlook, always with an eye on sustainability and reducing waste. The kind of chef who makes familiar ingredients feel like a discovery.
