Chef Álvaro Romero-Abreu Raya is a Spanish chef from Cádiz and the Chef de Cuisine of Cantabria by Chele Gonzalez at The Westin Manila in Ortigas. Trained in Michelin-starred kitchens, he was part of the Research and Development team at Mugaritz, the legendary two-Michelin-star restaurant in northern Spain considered one of the best in the world. At Cantabria, he brings that depth of technical training to bear on a menu rooted in traditional Spanish cooking, overseeing the kitchen under the creative direction of Chele Gonzalez and helping bring his vision of refined, regional Spanish cuisine to life in Manila.
