Restaurant Iai

Iai, located at The Montane in Bonifacio Global City, is a sushi kappo restaurant where instinct meets culinary craft. The name derives from "iaido," the Japanese martial art focused on awareness and keen responsiveness—reflecting chef Bruce Ricketts' off-the-cuff cooking style. The dinner-only omakase features Filipino, global, and seasonal Japanese ingredients. Guests can choose from three menus: the eight-course Kappo Omakase without sushi, the Sushi Omakase with seasonal appetizers and nigiri, or the Premium Omakase with up to 18 dishes. The chef’s counter seats ten for direct interaction with chef Bruce, while main tables and a private room are available for kappo service.
