Chef Mark Advincula is the head and R&D chef of Steak & Frice, the BGC steakhouse that manages to feel both nostalgic and exciting at the same time. Collaborating with AF Hospitality founder Amado Forés and chef Harold Flores, he helped reimagine the steakhouse from the ground up, anchoring the menu in childhood food memories while pushing it somewhere genuinely new. His instincts as an R&D chef come through in menus like the World of Wagyu tasting plate, designed to prove that the same ingredient can tell a completely different story depending on where it's raised — the kind of idea that sounds simple until you taste it and realize it isn't.
