Chef Bong Sagmit is a Pampanga-based chef and restaurateur, co-owner of Pigs & Pints and Tito Boy in Angeles City, whose cooking is rooted in Kapampangan heritage but restless in technique. He uses molecular gastronomy and a multi-component approach while staying firm that his food is borderless in technique yet grounded in Kapampangan identity. A founding member of Culinarya Pampanga alongside Chef Sau del Rosario, he has collaborated on dinners that forage indigenous local ingredients and champion the culinary traditions of the region. Whether fermenting his own fruit vinegars from kitchen scraps or building menus that surprise without losing their roots, Sagmit is one of Pampanga's most inventive and committed culinary voices.
