David Amorós

El Born

Chef David Amorós is a Barcelona-born chef and DJ, serving as head chef and co-owner of El Born at Mitsukoshi BGC and its La Pastisseria cheesecake outlets. His cooking centers on slow-cooked Catalan comfort food and cult-favorite cheesecakes inspired by family recipes. A supporter of the Slow Food movement since its inception, David ran tapas restaurants including Lola Tapas and Lola Bistro in Spain before moving to Manila to build El Born as a love letter to his hometown. His philosophy—"cook from the heart, slowly"—merges traditional Catalan dishes with Mediterranean flavors, making the restaurant feel less like dining out and more like being invited into his home.

The number one restaurant is Asador Alfonso. My favorite dish there is 'cecina de wagyu'
Recommend to try any cocktail at The Spirits Library. It has a fantastic atmosphere
